SUPER BOWL YUMMIES!

        This coming Super Bowl, your eats must be touchdown-ready! If not, then your team might expect a defeat. Admit it, Super Bowl is more than just an American Football game – bonding with family and friends plus the food are the big deal, for real! Even if your team loses, you and your squad’s stomach win with dip, sliders, wings and more! Check out these three game-day favorites and try ‘em yourself on and even after the Super Bowl!




Buffalo Wings

 Classic Buffalo Hot Wings

 



INGREDIENTS

  • 2 pounds of chicken wings
  • 6 cups of vegetable oil
  • 1 cup cayenne based hot sauce (like Frank's RedHot or Louisiana)
     
  • 2 tablespoons unsalted butter
  • 1 teaspoon white vinegar
  • 1 teaspoon Tabasco (optional)

DIRECTIONS

 

Fried Wings:

  • Pat wings dry with paper towels. In a 5 Quart Dutch Oven, heat oil to 375 degrees Fahrenheit.
  • Carefully add wings to hot oil using tongs, being careful not to overcrowd the Dutch Oven.
  • Deep fry until crispy and cooked through, about 10-12 minutes. For crispier wings, cook an additional 1-2 minutes.
  • Remove chicken from oil and drain on a paper towel.
  • Place wings in a bowl and toss in the sauce.

Grilled Wings:

  • Pat wings dry with paper towels. Preheat grill to medium-high heat.
  • Place wings in a large bowl and toss with 1 teaspoon of salt and 2 tablespoons of cornstarch. Mix well. Coat with 2 tablespoons of canola oil.
  • Oil grill grates, and lower temperature to medium.
  • Cook wings until crispy and cooked through, turning often about 20-25 minutes.
  • Remove wings from grill and place in a heat-safe bowl and toss in the sauce.

Sauce:

  • Melt butter in an 8 Inch Skillet.
  • Add hot sauce, white vinegar, and optional Tabasco.
  • Simmer for 1-2 minutes.

Cashew French Onion Dip

INGREDIENTS

  • ½ cup (120 ml) water
  • 1 lemon, zested and juiced
  • 2 cups (250 g) cashews, soaked 3 hours, rinsed, drained
     
  • 2 Tablespoons Worcestershire sauce
  • 2 teaspoons onion flake
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

DIRECTIONS

  • Place all ingredients into the Vitamix container in the order listed and secure the lid.
  • Select Variable 1.
  • Turn machine on slowly increase speed to the highest speed.
  • Blend for 30 seconds. Serve immediately or refrigerate.

Brioche/Buns


INGREDIENTS

  • 3 eggs
  • 1 tsp. salt
  • 2 tbsp. sugar
  • 25 g yeast
  • 125 ml lukewarm milk
  • 500 g flour, type 405
  • Flour and butter for the mold
  • 1 egg yolk
  • 2 tbsp. milk
 
Brioche/Buns

DIRECTIONS

  • Whisk the liquid butter with the eggs, sugar, and salt in a bowl.
  • Dissolve the yeast in the lukewarm milk and then add with the flour to the butter mixture in the bowl.
  • Knead into a smooth, elastic dough. Cover the dough and leave it to rise in a warm place for about 45 minutes until it doubles in size.
  • Preheat the oven to 180°C. Grease a Staub terrine dish with butter and dust with flour.
  • Place the risen brioche dough onto a floured work surface, knead it through again and shape into 8 equally sized spheres.
  • Place these close to each other in the mold so that they touch. Cover the dough leave to rise for another 30 min.
  • Whisk the egg yolk with milk and brush it on the top of the dough.
  • Place the brioche in a hot oven and bake for about 40-45 minutes until golden brown.
